Precautions before production
To ensure the quality of olives, they must be picked maximum within 24 hours before bringing them to the mill. Also, olives must be stored in a cool, well-ventilated place.
Precautions during storing
The enemies of EVOO while storing are the same with the enemies of wine: light, heat, air - oxygen, odors. So, we must keep and store the bottle of EVOO in a dry and cool place. Avoid to have small quantities of EVOO in big bottles because the oxygen causes oxidation. Also, keep away from odors because they can alter the taste and the flavour of the oil.
